avocado toast, scrambled eggs, hot sauce – thanks gwyn

AVOCADO TOAST makes an awesome, brilliant, simple and quick breakfast!

If you’re anything like me weekday breakfasts are tough. I’m usually in too much of a hurry to cook anything. I get sick of cereal. Mostly, I skip brekkie and just drink a cup of coffee. I know, I know – it’s the most important meal of the day. Those words ring in my ear like a gong. Yet, despite that rule being branded on my brain, my belly stays empty until noon, until now.

The best I can tell Gwyneth Paltrow introduced the world to AVOCADO TOAST in her cook book, It’s All Good. I love avocado but had never considered eating it for breakfast until Meg mentioned that whenever she’s in a hurry she fixes herself avocado toast. She owns a copy of Paltrow’s book which is where she found the recipe. She just mashes up some avocado with a little lemon or lime juice and salt and pepper, smears it on a piece of toast and her breakfast is ready. The possibilities for toppings are endless. For today, I chose scrambled eggs, hot sauce and some fresh chives. By the time I was done photographing my breakfast it was stone cold. It was still delicious!

THE LOVE: The most wonderful thing about this spectacular [ I can’t help it – the adjectives are pouring out of me!] is the limitless topping possibilities: smoked salmon, chopped mango, sliced tomato, grated cheese…

Thanks for reading.

  • Yum! This looks so good. One hot sauce that I’ve found that pairs amazingly with avocados is Picamas. Since eating it with avocados in Guatemala, it’s been a staple hot sauce for me (although hard to find around here). Not very hot, but VERY tasty!

    • One of the challenges of living in a small city…Next time you’re in Guatemala bring back a case!
