AVOCADO TOAST makes an awesome, brilliant, simple and quick breakfast!
If you’re anything like me weekday breakfasts are tough. I’m usually in too much of a hurry to cook anything. I get sick of cereal. Mostly, I skip brekkie and just drink a cup of coffee. I know, I know – it’s the most important meal of the day. Those words ring in my ear like a gong. Yet, despite that rule being branded on my brain, my belly stays empty until noon, until now.
The best I can tell Gwyneth Paltrow introduced the world to AVOCADO TOAST in her cook book, It’s All Good. I love avocado but had never considered eating it for breakfast until Meg mentioned that whenever she’s in a hurry she fixes herself avocado toast. She owns a copy of Paltrow’s book which is where she found the recipe.She just mashes up some avocado with a little lemon or lime juice and salt and pepper, smears it on a piece of toast and her breakfast is ready. The possibilities for toppings are endless. For today, I chose scrambled eggs, hot sauce and some fresh chives. By the time I was done photographing my breakfast it was stone cold. It was still delicious!
Makes 1 slice
½ ripe avocado, pit removed
¼ fresh lime
Sea salt, to taste, freshly ground black pepper
1 egg, scrambled
1 slice whole grain bread, toasted no butter
Hot sauce – I used Frank’s
Freshly snipped chives
- In a bowl, roughly mash the avocado with the lime juice.
- Season with seal salt and freshly ground pepper.
- Pile mashed avocado on top of toast.
- Place scrambled eggs on top of the avocado.
- Drizzle with hot sauce and sprinkle with snipped chives.
