fresh pineapple with brown sugar and sour cream

I have been doing a similar dish for years I half the pineapple, fillet out the meat, then slice it and load it back into the empy pineapple shell, smother with sourcream and sprinkle brown sugar over the top. when I have them I cut through the leafy green stem and all, looks very cool when presented. I have a small cup of cocktail toothpicks also, just pock it in a chunk and enjoy.
