FRESH TOMATO SALSA

My friend Nathalie is one of the most fearless women that I have ever known. A courageous lawyer, powerful community advocate, passionate in her private life and absolutely stalled in the kitchen… In her determined way, she decided to make the leap from kitchen coward to kitchen courageous with a little help from me and her daughter Maddy!

I chose a menu which was all over the map. I wanted to incorporate some utensil skill lessons with some seemingly daunting food prep. We started with a fresh tomato salsa…

FRESH TOMATO SALSA

serves 4

6 plum tomatoes, 2 cloves of garlic, 2 jalepeno peppers, zest of 1 lime, large handful of fresh cilantro, juice of 1/2 of the lime

dice the tomatoes into 1/4 inch cubes…chop garlic,peppers and cilantro finely…place in ceramic bowl

add lime zest and juice…stir carefully as to not bruise tomatoes

allow flavours to enhance by leaving mixture to sit at room temperature for 1 hour

allow guests to add their own salt and pepper

Hi there! I could have sworn I’ve been to this blog before but after reading through some of the post I realized it’s new to me.
