Sour Cream and Lemon Frosting

Serves: 12 cupcakes Prep Time: Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 1/2 cup thick sour cream
  • 1/2 cup salted butter, at room temperature
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon salt
  • 4 1/4 cup icing sugar, sifted

Instructions

  1. Place butter in the bowl of your stand mixer and beat on medium high for 3 minutes.
  2. Stop the machine, scrape the sides and add the sour cream.
  3. Beat on high until smooth.
  4. Stop machine and add lemon juice, vanilla, salt and 1 cup of icing sugar.
  5. Beat on medium speed until well mixed. Repeat until all icing sugar has been incorporated.
  6. After last icing sugar addition, beat on high for 30 seconds.
  7. Frost your cake or cupcakes.
