Yesterday, when I looked in the refrigerator, I noticed that I had built up quite an inventory of assorted, half used vegetables that would range in age meaning since I bought it at the market anywhere from 2 weeks to 1 day old. I am still struggling with portion control since the girls left home. Cooking for two can be challenging after so many years of cooking for a crowd. I had a couple of meetings in the morning so between appointments I took a stroll through the City Market. I am absolutely an impulsive food shopper. You create a beautiful food display and I lose all control. My favorite produce shop has a gorgeous oriental section and the baby bokchoy had my name all over it! The most important step in stirfrying is to have all of your ingredients chopped, measured and ready to go before you fire up the wok. Your cooking time is very quick!
1 red onion, peeled and diced
2 cloves of garlic, minced
1 inch piece of fresh ginger, peeled and minced
2 tablespoons walnut oil, you can use sunflower oil
1 tablespoon sesame oil
heat oil in wok until hot then add onion, garlic, ginger and stirfry 1 minutes stirring constantly
4 celery stalks, chopped rough
1 yellow bell pepper, seeded and chopped rough
1/2 head of broccoli, trimmed and chopped rough
2 whole red chillies
add vegetables and stirfry for 3 minutes, stirring constantly
1 cup cherry tomatoes, left whole
4 baby bokchoy, chopped rough
add vegetables and stirfry 2 minutes, stirring constantly
squeeze the juice of 1 lime
add 3 tablespoons oyster sauce*
1 tablespoon soy sauce
1 teaspoon sugar
stirfry 2 minutes and you are done!
*most grocery stores carry a great supply of oriental ingredients
I am happy to say that my fridge is empty and I will now have the fun of loading it up again.
