Country Corn Fresh
Makes 5 – 250 ml jars
5 cups fresh whole kernel corn 8 – 10 ears of corn
1 cup diced sweet red peppers
1 cup chopped celery
¾ cups diced onions
¾ cups sugar
3 cups white vinegar
1 cup water
1 tablespoon sea salt
1 tablespoon celery seed
1 tablespoon mustard seeds
1 teaspoon turmeric
Combine all of the ingredients in a large pot over medium high heat.
Bring to a boil, reduce heat and simmer for 20 minutes stirring often.
Pack in prepared jars.
